  • 1 teaspoon baking soda

  • 1 cup buttermilk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup cooked turkey bacon, chopped
  • 1 tablespoon cinnamon
  • 1/2 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin.
  2. In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine buttermilk, melted butter, eggs, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the chopped turkey bacon.
  6. In a small bowl, mix cinnamon and brown sugar.
  7. Fill each muffin cup halfway with batter, sprinkle with cinnamon sugar, then top with remaining batter and more cinnamon sugar.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool before serving.
