  • 1 cup coconut milk
  • 1 cup shredded coconut

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 9×5 inch loaf pan.
  3. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla and coconut extracts.
  6. In another bowl, whisk together flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the batter, alternating with coconut milk until combined.
  8. Fold in shredded coconut.
  9. Pour the batter into the prepared pan and smooth the top.
  10. Bake for 1 hour, or until a toothpick inserted into the center comes out clean.
  11. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
