1 pound chicken thighs
1 cup jasmine rice
1 can (13.5 oz) coconut milk
2 cups chicken broth
1 tablespoon curry powder
2 cloves garlic, minced
1 teaspoon ginger, grated
1 onion, diced
2 tablespoons olive oil
Salt and pepper to taste
Instructions
In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent.
Stir in the garlic and ginger, cooking for another minute.
Add the chicken thighs and cook until golden brown on all sides.
Sprinkle in the curry powder, and mix well.
Add the jasmine rice, coconut milk, and chicken broth to the pot.
Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked and chicken is tender.
Season with salt and pepper as desired, then fluff rice with a fork before serving.
Notes
This dish can be garnished with fresh cilantro for added flavor.
