  • 1 lb chicken breast
  • 1 can coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon ginger, grated
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup green onions, chopped
  • 1/2 lime for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine the rice with coconut milk and salt; bring to a boil.
  3. Reduce the heat, cover, and simmer for 18-20 minutes or until rice is tender and liquid is absorbed.
  4. While the rice cooks, season the chicken breast with soy sauce, ginger, garlic, salt, and pepper.
  5. Grill or sauté the chicken for 6-7 minutes on each side or until cooked through.
  6. Once the chicken is done, let it rest for a few minutes before slicing.
  7. Fluff the rice with a fork and mix in green onions.
