  • 1 cup jasmine rice
  • 1 pound chicken thighs
  • 1 can coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon ginger, grated
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 tablespoon cilantro, chopped

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a saucepan, combine rice, coconut milk, and a pinch of salt. Bring to a boil, then reduce heat and simmer until rice is cooked.
  3. While the rice is cooking, season the chicken thighs with soy sauce, lime juice, ginger, and garlic.
  4. In a skillet, cook the chicken over medium heat until cooked through. Remove and slice.
  5. In the same skillet, add broccoli and stir-fry until tender.
  6. To serve, divide rice among bowls, top with sliced chicken, broccoli, and cilantro.

Notes

  • For extra flavor, marinate chicken for at least 30 minutes before cooking.
