  • 1/2 cup unsalted butter, cold
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 2-3 tablespoons ice water
  • 1/2 cup packed brown sugar
  • 1/4 cup corn syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins or pecans (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine flour, cold butter, sugar, and salt. Mix until crumbly.
  3. Add ice water, one tablespoon at a time, until the dough holds together.
  4. Roll out the dough and cut into circles to fit a muffin tin.
  5. In another bowl, mix brown sugar, corn syrup, egg, and vanilla until smooth.
  6. Pour the filling into each pastry shell, adding raisins or pecans if desired.
  7. Bake for 15-20 minutes until the filling is set and the crust is golden.
  8. Let cool before serving.
