Deliciously spiced pumpkin muffins coated in cinnamon sugar, perfect for a cozy treat any time of year.

  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the granulated sugar, brown sugar, and vegetable oil until combined.
  4. Add eggs, pumpkin puree, and vanilla to the sugar mixture, and mix until smooth.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 20-25 minutes until a toothpick comes out clean.
  8. Let them cool before removing them from the tin.
  9. For the cinnamon sugar topping, mix sugar and cinnamon in a small bowl and sprinkle on top before serving.

Notes

  • These muffins freeze well; just wrap them tightly in foil or plastic wrap.
  • Feel free to add chocolate chips or nuts for extra flavor.
