1 cup graham cracker crumbs
1/2 cup unsalted butter, melted
2 cups cream cheese
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1/2 cup sour cream
1/4 cup granulated sugar (for topping)
1 tablespoon ground cinnamon (for topping)
Instructions
Preheat your oven to 325°F (163°C).
In a mixing bowl, combine graham cracker crumbs and melted butter until well mixed.
Press the mixture into the bottom of a greased baking dish to form the crust.
In a separate bowl, beat together cream cheese and sugar until smooth.
Add eggs one at a time, mixing well after each addition.
Stir in vanilla extract, ground cinnamon, and sour cream until fully combined.
Pour the cheesecake mixture over the crust and spread evenly.
Bake for 35-40 minutes until the edges are set but the center slightly jiggles.
Mix together the extra sugar and cinnamon for topping.
Once cooled, sprinkle cinnamon sugar on top before slicing into bars.
