Deliciously rich chocolate thumbprint cookies filled with your favorite jam or chocolate ganache.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup chocolate chips (for filling)
  • ½ cup jam (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until smooth.
  3. Beat in the egg yolk and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Roll dough into small balls and place on the prepared baking sheet.
  7. Make a thumbprint in the center of each ball.
  8. Fill each thumbprint with chocolate chips or jam.
  9. Bake for 12-15 minutes or until set.
  10. Cool on a wire rack before serving.

Notes

  • For an even richer flavor, add a pinch of espresso powder to the dough.
  • Experiment with different jams for unique flavors!
