  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
  • 1/4 cup olive oil
  • 1/2 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 1/4 cup capers
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Butterfly the chicken breasts and pound them to an even thickness.
  2. Dredge the chicken in flour, shaking off excess.
  3. Heat butter and olive oil in a pan over medium heat.
  4. Add the chicken, cooking until golden on both sides.
  5. Remove chicken and set aside.
  6. Add lemon juice, chicken broth, and capers to the pan, scraping up any brown bits.
