Ingredients

  • 1 pound chicken breasts
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery, and sauté until softened.
  2. Add garlic and thyme, cooking for another minute until fragrant.
  3. Add chicken breasts and broth, bringing to a simmer. Cook until chicken is fully cooked, about 20 minutes.
  4. Remove chicken, shred it, and return it to the pot.
  5. Add orzo to the soup and cook according to package instructions, about 8-10 minutes.
  6. Season with salt and pepper to taste and serve warm.

Notes

  • For added flavor, consider adding a squeeze of lemon juice before serving.
  • This soup can be made ahead of time and reheated before serving.
