Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can enchilada sauce
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, sautéing until onion is translucent.
  3. Stir in cooked chicken, enchilada sauce, black beans, corn, diced tomatoes, chicken broth, cumin, and chili powder.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Serve hot with your choice of toppings.
