A delicious and easy chicken enchilada casserole recipe that will satisfy your cravings.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 can enchilada sauce
  • 2 cups shredded cheese
  • 6 corn tortillas
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a baking dish, spread some enchilada sauce on the bottom.
  3. Layer three tortillas on top.
  4. Add half of the chicken, black beans, corn, and cheese.
  5. Repeat the layering with the remaining ingredients.
  6. Top with the last tortillas and pour the remaining enchilada sauce over.
  7. Bake for 20 minutes, until the cheese is bubbly.

  • This casserole can be made ahead of time and stored in the fridge.
