- 2 cups shredded cooked chicken
- 1 can enchilada sauce
- 2 cups shredded cheese
- 6 corn tortillas
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- Preheat the oven to 350°F (175°C).
- In a baking dish, spread some enchilada sauce on the bottom.
- Layer three tortillas on top.
- Add half of the chicken, black beans, corn, and cheese.
- Repeat the layering with the remaining ingredients.
- Top with the last tortillas and pour the remaining enchilada sauce over.
