2 pounds potatoes, peeled and diced
1 pound smoked sausage, sliced
2 cups shredded cheddar cheese
1 cup sour cream
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
salt to taste
pepper to taste
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, combine the diced potatoes and sliced sausage.
Add the olive oil, garlic powder, onion powder, salt, and pepper to the bowl, and mix well.
Transfer the mixture to a baking dish and cover with foil. Bake for 45 minutes.
Remove the foil and add the sour cream and shredded cheese on top. Bake uncovered for an additional 15 minutes, or until the cheese is bubbly and golden.
Let cool for a few minutes before serving.
Notes
For a spicier kick, add some diced jalapeños.
