  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup heavy cream
  • ½ cup strong brewed coffee
  • 1 cup caramel sauce
  • ½ cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine the chocolate cookie crumbs and melted butter, then press the mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth, then add the vanilla and beat in the eggs one at a time.
  4. Mix in the heavy cream and brewed coffee until well combined.
  5. Pour the cheesecake batter over the crust and bake for about 55 minutes, or until set.
  6. Let the cheesecake cool, then refrigerate for at least 4 hours before serving.
  7. Drizzle with caramel sauce and sprinkle chocolate chips on top before serving.
