A delicious and easy Cajun sausage and rice recipe perfect for busy weeknights.

Ingredients

  • 1 pound smoked sausage
  • 1 cup bell peppers, chopped
  • 1 cup onion, chopped
  • 2 cups chicken broth
  • 1 cup long-grain rice
  • 1 tablespoon Cajun seasoning
  • 1 cup diced tomatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the smoked sausage, bell peppers, and onion. Cook until the vegetables are softened.
  3. Stir in the rice, chicken broth, diced tomatoes, Cajun seasoning, and garlic powder.
  4. Bring the mixture to a boil, then reduce heat to low and cover.
  5. Simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
  6. Fluff with a fork and serve warm.
