  • 1 pound boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup diced tomatoes
  • 2 green onions, sliced

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken and cook until browned on both sides.
  3. Remove chicken and set aside. In the same skillet, add onion, bell pepper, and garlic; sauté until softened.
  4. Stir in Cajun seasoning, rice, chicken broth, and diced tomatoes.
  5. Return chicken to skillet, cover, and simmer until rice is cooked and chicken is done.
  6. Garnish with green onions before serving.
