Delicious and easy to make, this Butternut Squash & Spinach Lasagna is the perfect comfort food for any occasion.

Ingredients

  • 2 cups butternut squash, diced
  • 3 cups fresh spinach
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add butternut squash and cook until tender.
  4. Stir in spinach and cook until wilted.
  5. In a baking dish, layer noodles, butternut squash mixture, ricotta, and mozzarella. Repeat layers.
  6. Finish with a layer of noodles and top with remaining mozzarella and Parmesan.
  7. Cover with foil and bake for 30 minutes, then uncover and bake for another 15 minutes until cheese is bubbly.
  8. Let it cool for 10 minutes before serving.

Notes

  • For a vegetarian version, use vegetable broth instead of chicken broth.
  • Let the lasagna sit for a few minutes for easier slicing.
