- 2 cups butternut squash, diced
- 3 cups fresh spinach
- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon nutmeg
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add butternut squash and cook until tender.
- Stir in spinach and cook until wilted.
- In a baking dish, layer noodles, butternut squash mixture, ricotta, and mozzarella. Repeat layers.
- Finish with a layer of noodles and top with remaining mozzarella and Parmesan.
- Cover with foil and bake for 30 minutes, then uncover and bake for another 15 minutes until cheese is bubbly.
- Let it cool for 10 minutes before serving.
Notes
- For a vegetarian version, use vegetable broth instead of chicken broth.
- Let the lasagna sit for a few minutes for easier slicing.
