A delicious and comforting broccoli cheddar soup with a hint of turkey bacon, perfect for a cozy meal.

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the turkey bacon and cook until crispy, then remove and set aside.
  3. In the same pot, sauté the onion and garlic until soft.
  4. Add the broccoli and chicken broth, bringing to a boil.
  5. Reduce heat and simmer until broccoli is tender.
  6. Blend the soup until smooth, then return to the pot.
  7. Stir in the cheddar cheese and heavy cream, heating until melted.
  8. Season with salt and black pepper; serve topped with crumbled turkey bacon.

Notes

  • This soup is best enjoyed fresh but can be refrigerated for up to 3 days.
