A warm and comforting bowl of broccoli and cauliflower soup made with turkey bacon.

Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
  2. Add onion and garlic to the pot and sauté until soft.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add broccoli and cauliflower, cooking until tender.
  5. Using an immersion blender, blend until smooth. Stir in the salt, pepper, and heavy cream.
  6. Serve with crumbled turkey bacon on top.

Notes

  • For added flavor, consider adding herbs like thyme or parsley.
  • This soup can be made ahead of time and stored in the fridge.
