Start your day with a delicious and easy blueberry breakfast quesadilla filled with cream cheese and fresh blueberries.

Ingredients

  • 2 tortillas
  • 1 cup fresh blueberries
  • 4 ounces cream cheese
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter

Instructions

  1. In a bowl, mix the cream cheese, honey, and vanilla extract until smooth.
  2. Spread the cream cheese mixture on one side of each tortilla.
  3. Sprinkle fresh blueberries on top of the cream cheese filling.
  4. Top with the other tortilla.
  5. In a skillet, melt the butter over medium heat.
  6. Add the quesadilla to the skillet and cook for 2-3 minutes on each side or until golden brown.
  7. Remove from skillet, slice, and serve warm.

Notes

  • For extra flavor, consider adding cinnamon to the cream cheese mixture.
  • These quesadillas can be served with maple syrup or additional honey.
