  • 1 cup mascarpone cheese
  • 1 sheet puff pastry
  • 1 egg, beaten
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface and cut into squares.
  3. In a bowl, mix together the mascarpone cheese, sugar, and vanilla extract until smooth.
  4. Place a spoonful of the mascarpone mixture in the center of each pastry square.
  5. Add a few blueberries on top of the mascarpone.
  6. Fold the corners of the pastry over the filling and pinch to seal.
  7. Brush the top with the beaten egg.
  8. Bake for 15-20 minutes or until golden brown.
  9. Let cool slightly before serving.
