- 12 large portobello mushrooms
- 2 ripe avocados
- 4 large eggs
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup shredded cheese (optional)
- 2 tablespoons fresh cilantro, chopped
- Preheat the oven to 375°F (190°C).
- Remove the stems from the portobello mushrooms and brush them with olive oil.
- In a bowl, mash the avocados and mix in garlic powder, salt, and pepper.
- Fill each mushroom cap with the avocado mixture.
- Make a small well in the center of each filled mushroom, then crack an egg into the well.
