  • 12 large portobello mushrooms
  • 2 ripe avocados
  • 4 large eggs
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup shredded cheese (optional)
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Remove the stems from the portobello mushrooms and brush them with olive oil.
  3. In a bowl, mash the avocados and mix in garlic powder, salt, and pepper.
  4. Fill each mushroom cap with the avocado mixture.
  5. Make a small well in the center of each filled mushroom, then crack an egg into the well.
  6. Top with cheese if desired.
  7. Bake in the preheated oven for about 20 minutes, or until the eggs are cooked to your liking.
  8. Garnish with fresh cilantro before serving.
