A heartwarming and flavorful soup that combines the creaminess of white beans with the savory notes of turkey bacon and chicken ham.

Ingredients

  • 1 tablespoon olive oil
  • 4 ounces turkey bacon, chopped
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 cups kale, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the turkey bacon and cook until crispy.
  2. Add the onion and garlic, sautéing until translucent.
  3. Pour in chicken broth and bring to a boil.
  4. Add white beans, thyme, and rosemary; reduce heat and simmer for 15 minutes.
  5. Stir in the kale and cook until wilted. Season with salt and pepper.
