A delicious and simple baked zucchini, spinach, and feta casserole that is perfect for a family dinner or an easy meal prep.

  • 3 cups zucchini, sliced
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup ricotta cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup breadcrumbs
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the zucchini, spinach, feta cheese, ricotta cheese, eggs, garlic powder, onion powder, oregano, salt, and pepper.
  3. Mix until all ingredients are well combined.
  4. Transfer the mixture into a greased baking dish.
  5. Top with breadcrumbs and drizzle with olive oil.
  6. Bake in preheated oven for 30-35 minutes, or until golden brown on top.
