A comforting and creamy baked potato soup that features turkey bacon and chicken ham for a delicious twist.

  • 4 large russet potatoes
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble, leaving the drippings in the pot.
  2. Add the diced onions and garlic to the pot, sautéing until soft.
  3. Dice the potatoes and add to the pot with chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Use a potato masher to mash some of the potatoes for a thicker consistency.
  5. Stir in the heavy cream, diced chicken ham, salt, and pepper. Cook for an additional 5 minutes.
  6. Serve hot, topped with cheddar cheese, crumbled turkey bacon, and green onions.

Notes

  • For a thicker soup, use less broth or mash more potatoes.
