- 4 large russet potatoes
- 4 slices turkey bacon
- 1 cup chicken ham, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble, leaving the drippings in the pot.
- Add the diced onions and garlic to the pot, sautéing until soft.
- Dice the potatoes and add to the pot with chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Use a potato masher to mash some of the potatoes for a thicker consistency.
- Stir in the heavy cream, diced chicken ham, salt, and pepper. Cook for an additional 5 minutes.
- Serve hot, topped with cheddar cheese, crumbled turkey bacon, and green onions.
Notes
- For a thicker soup, use less broth or mash more potatoes.
- Feel free to add additional spices for extra flavor.
