A creamy and indulgent bacon cheeseburger soup made with turkey bacon for a lighter twist on a classic comfort dish.

Ingredients

  • 1 pound turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 2 cups diced tomatoes
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mustard

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté onion and garlic until softened.
  3. Add beef broth and diced potatoes; bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Stir in cheddar cheese, heavy cream, diced tomatoes, Worcestershire sauce, and mustard.
  6. Chop the turkey bacon and add back to the soup. Stir until heated through.
  7. Serve warm, garnished with additional cheese if desired.

Notes

  • This soup is great topped with extra cheese and fresh herbs.
  • Feel free to substitute ground beef for a richer flavor.
