- 1 pound turkey bacon
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups diced potatoes
- 1 cup shredded cheddar cheese
- 1 cup heavy cream
- 2 cups diced tomatoes
- 1 tablespoon Worcestershire sauce
- 1 teaspoon mustard
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- In the same pot, sauté onion and garlic until softened.
- Add beef broth and diced potatoes; bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Stir in cheddar cheese, heavy cream, diced tomatoes, Worcestershire sauce, and mustard.
- Chop the turkey bacon and add back to the soup. Stir until heated through.
- Serve warm, garnished with additional cheese if desired.
