A creamy and indulgent take on classic lasagna, Alfredo Lasagna Soup is the perfect meal for cozy nights.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (15 ounces) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 8 ounces lasagna noodles, broken
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned.
  2. Add onion and garlic, cooking until softened.
  3. Pour in chicken broth and crushed tomatoes; stir in oregano, Italian seasoning, and red pepper flakes.
  4. Bring to a boil, then add broken lasagna noodles and reduce heat to a simmer.
  5. After noodles are tender, stir in heavy cream and Parmesan cheese until melted.
  6. Fold in spinach and cook until wilted.
  7. Season with salt and pepper to taste before serving.

Notes

  • Top with additional Parmesan cheese and fresh basil for extra flavor.
